Egg Bhurji (Indian Scrambled Eggs)

Note
Salt as needed | Black pepper as needed | Cilantro (optional) as needed
Instructions

Cut onion and tomato fine. Cut Serrano Peppers into little semi-circles.

In a bowl, crack four eggs and add salt and pepper. Beat the eggs well

In a pan, heat oil then add cumin seeds, onion and chili. Stir till the mix is lightly fried (aprx. 30 seconds)

Add cumin powder, chili powder, turmeric powder and a little salt to taste. Mix the spices well (aprx. 20 seconds)

Add tomatoes and chopped cilantro (optional) to the spices and saute for aprx. 30 seconds or till onions are light brown

Pour eggs into the spices and mix well.

Keep stirring till eggs are done!
