Boil water and add quinoa. Cook for about 15-20 min until water is absorbed and the quinoa is fluffy.
Cut a butternut squash in halves, drizzle it with oil and bake in the oven for 30 min. Meanwhile heat up oil in a pan, add minced garlic, spinach and sliced mushroom.
The butternut squash is done when it can easily be cut with a fork. Place the spinach mushroom mix in the butternut. Cover the quinoa with avocado slices and serve with half a lemon. Top everything with black sesame and hemp seeds.
